It’s Mother’s Day lunch, a very special day with the family and we are preparing for an outstanding banquet. The table is set with beautiful spring floral arrangements of red, pink, yellow and white tulips; water goblets, white and red wine glasses and napkins are being folded and the silverware is getting shined. Elegant, eye-catching vanilla-colored beeswax dinner candles are being used in Mom’s favorite candlesticks and the table is ready to go.
Today’s menu is an ocean voyage at its glory with the highest quality seafood from all corners of the globe. It will consist of two flavor-packed, mouthwatering appetizers using American jumbo Sun Shrimp and South African lobster tails, followed by a delicious Chilean Sea Bass entrée with a delicate dessert to close it all off. The food will be paired with a welcome cocktail, followed by a parade of white wines to highlight and enhance the cuisine of the day.
It's cocktail time and we are using Mom’s favorite spirit, gin. On that note, we will be making a cucumber gin fizz with a lime and cucumber simple syrup that will provide freshness, and mixing it with a botanical gin and topping it off with the playful bubbles of a sparkling water; we will garnish each cocktail with beautiful cucumber ribbons on a wooden skewer, thinly sliced lime wheels and finally some aromatic fresh mint leaves.
This refreshing, cool cocktail will be the perfect pairing for our first appetizer served on a large platter and passed around as the family gathers; za’atar seasoned grilled shrimp on a small scallion pancake with a dollop of tzatziki sauce. What a wonderful way to get the conversation started and the fun family stories flowing.
Our next appetizer is a showstopper, and one the whole family will swoon over. High-quality, premium South African Lobster tails are cooked sous-vide in garlic and butter, thinly sliced, and served on a mini slider brioche bun with salted burnt butter spread on a bed of micro cilantro and a thin slice of heirloom tomato. Be careful, this one just seems to disappear as fast as it comes on to the table. This dish pairs well with a cool glass of oaked chardonnay. | [product:lobster-tails] |
It's time for our main entrée and the table is vibrating with excitement for pan seared Chilean Sea Bass; served with a caramelized lemon-caper sauce over a celery root puree and honey roasted farm carrots. The rich, buttery, and flaky white flesh fish is of the highest quality. It cooks in no time and is a prime candidate for citrus sauces. To finish this beautiful day of joy and love, a white chocolate mousse with a strawberry coulis paired with a full ripe grape German Riesling Spätlese will keep the whole experience light and enjoyable in every bite.
