Cooking tips

IMPORTANT: Do not defrost at room temperature, in water, or under running water. Never defrost in the microwave. Place in refrigerator to fully defrost Bacon Wrapped Grass Fed Filet Mignon 24-48 hours prior to cooking or 24 hours prior to cooking Lobster Tails.

After you have fully defrosted your bacon wrapped filet, remove from packaging and lightly blot dry with a paper towel.

We recommend preparing your bacon wrapped filet in a heavy bottomed sauté pan. Set your oven to 450°F and then remove your defrosted filet from the refrigerator and allow to come to room temperature for 20 minutes. Pat filet dry with a paper towel and secure bacon slice with a toothpick or butcher’s twine. Season filet with salt and cracked black pepper. Heat pan over medium high heat and add 2 Tbsp. oil (or 1 Tbsp. oil and 1 Tbsp. butter). Sear filet 1-2 minutes on each side before transferring to an oven proof tray and placing in preheated oven. Cook filet in oven for approximately 6-8 minutes or an instant read thermometer reading 125°-130° for medium rare.

Allow filet to rest for 5 minutes before serving.

For your South African Lobster Tails, after defrosting, heat a grill pan on high. Split defrosted lobster tails in half, cut all the way through shell and meat. Drizzle oil on tail meat. Season with salt & cracked black pepper. Place tails meat side down in grill pan. Cook for 6 to 7 minutes on one side. Flip over and cook for another 3 to 4 minutes. Remove tails from pan and rest 3 minutes before serving.
