Cooking tips

IMPORTANT: Do not defrost at room temperature, in water, or under running water. Never defrost in the microwave. Place in refrigerator to fully defrost 24 hours prior to cooking.

Sometimes called “sashimi-grade tuna”, this prime fish gets the name “Saku” from the Japanese word for block. This cut is also commonly served as maguro in sushi bars.

Culinary possibilities abound with this block-Cut Saku Tuna. Serve it raw, seared, or grilled, seasoned with one of our Spice Packs, or coated in sesame seeds.

Here are some general timings for searing or grilling your tuna.

Sear or grill keeping the block intact. For best results, do not sear or grill this tuna in precut strips.

In a very hot oiled pan or grill, cook tuna:
1-2 minutes per side for rare preparation or 2-3 minutes per side for medium rare preparation.

It is not recommended to serve this fish above medium rare due to its firm texture and flavor.

This tuna is fished in the Western Pacific Ocean, cut and trimmed from the top loins of the Yellowfin Tuna, fresh frozen, and individually vacuum packed. Our Saku Tuna has been super-frozen at -40 degrees Celsius in under an hour to eliminate deterioration of the cells in the meat. The result is a noticeably firmer texture garnering it it’s AAA rating.
