Cooking tips

IMPORTANT: Do not defrost A5 Wagyu or Lobster at room temperature, in water, or under running water. Never defrost in the microwave. Place A5 Wagyu in refrigerator to fully defrost 48 hours prior to cooking or 24 hours prior to cooking Lobster.

Once defrosted, take A5 Wagyu out of refrigerator 15 minutes before cooking to allow it to come to room temperature.

We recommend preparing your A5 Wagyu in a heavy bottomed sauté pan on the stovetop. Due to the high fat content Please DO NOT grill/cook Wagyu over an open fire, such as a propane or charcoal grill.

First, season with salt & cracked black pepper. Heat pan over medium high heat. No need to add any fat or oil. Sear for 1-2 minutes on all sides. Remove Wagyu from the pan. Allow it to rest for 5 minutes before slicing and enjoying.

For your South African Lobster Tails, after defrosting, heat a grill pan on high. Split defrosted lobster tails in half, cut all the way through shell and meat. Drizzle oil on tail meat. Season with salt & cracked black pepper. Place tails meat side down in grill pan. Cook for 6 to 7 minutes on one side. Flip over and cook for another 3 to 4 minutes. Remove tails from pan and rest 3 minutes before serving.

Potato Gratin - Do not defrost before cooking. For best results, simply preheat your oven to 350°F. Place your frozen potato gratin on a baking sheet in the center of the oven and allow to cook for 24 minutes. You can also choose to cook in your microwave for 2- 2 ½ minutes until fully heated.

Chocolate Lava Cake - Do not defrost before serving. For a warm melting lava cake: Reheat 17 min in preheated oven at 350°F OR in the microwave 45-55 seconds.

South African Lobster: Caught in the cold southern coastal waters of South Africa by using a long line lobster trap method at depths of 50 to 150 feet, this tail boasts sweet, succulent meat in a brilliant red shell. Its tail to total body mass of 45% gives it one of the highest tail yields of any lobster in the world.

A5 Wagyu: Real A5 Wagyu comes from one place and one place only: Japan. To ensure our A5 is born, raised, and shipped from the Kagoshima prefecture, our farms provide certificate of authenticity.

We're happy to provide certificates to customers upon request.

These sides and desserts are created and shipped to The Seasoned Carte from Guerche de Bretagne, and Fécamp, in Normandy, France.

Our products are flash frozen upon cultivation and are kept that way until you are ready to enjoy these premium offerings.

We ship orders on Monday and Wednesdays. All orders that ship on Mondays must be placed by Sunday at 11:59pm EST. All orders that ship on Wednesdays must be placed by Tuesday at 11:59pm EST.
