Your South African Lobster tails can be placed on a sheet pan in an oven preheated to 400° with top split (saddleback) and brushed with melted Lemon Garlic Butter, and if desired, season with Citrus Pepper Seasoning Blend. Allow Lobster tails to cook 13-15 minutes in oven or 8-10 minutes under broiler.

Sockeye Salmon Filets are best prepared by heating your pan over medium high heat. Season Salmon with Citrus Pepper Seasoning if desired. Add 1 Tbsp. olive oil or cooking oil of your choice to the pan. Place your Wild Sockeye Salmon in the pan skin side first, being careful to lay it away from you to avoid any oil splashing. Allow salmon to cook about 7-8minutes before carefully flipping salmon to cook on other side for about 3 minutes. Remove salmon from pan and rest filets for 3 minutes before serving. *tip- after flipping salmon add ¼ cup white wine and 1 Tbsp. lemon garlic butter to pan and carefully baste salmon. Once salmon is fully cooked use pan liquid as a sauce.

Pat defrosted Cobia Filet dry and season with Citrus Pepper Seasoning if desired, or simply salt and cracked black pepper. Heat pan over medium high heat, add 1 Tbsp. oil. Place filet in the pan, cook for about 3 to 4 minutes on one side before carefully flipping it over to cook on the other side for about 3 to 4 minutes. Remove filet from pan, let rest for 3 minutes before serving. Finish with squeeze of fresh lemon.

Our lobster caught in the cold southern coastal waters of South Africa by using a long line lobster trap method at depths of 50 to 150 feet, this tail boasts sweet, succulent meat in a brilliant red shell. Its tail to total body mass of 45% gives it one of the highest tail yields of any lobster in the world.

We proudly offer wild-caught Pacific Sockeye Salmon, sustainably caught from the cold and clear Alaskan waters of Bristol Bay.
