These roasted carrots make an excellent side dish, combining the natural sweetness of the carrots with the savory roasted and caramelized notes.

- Pre heat oven to 400°. Toss carrots, garlic, oil, and herbs to coat. Season with salt and pepper.
- Lay carrots out on baking sheet being sure to spread out evenly.
- Roast carrots for 20 minutes and stir/flip carrots over. Roast an additional 20 minutes, or until tender.
- Remove from oven and serve.
Chef’s Notes
- Experiment with different herbs, such as thyme, for a different flavor nuance
- Add additional vegetables, such as leeks, and radish
- Before cooking, drizzle carrots with maple syrup or honey for added complexity
- Drizzle cooked carrots with a good balsamic vinegar or Extra Virgin Olive Oil
