 These roasted carrots make an excellent side dish, combining the natural sweetness of the carrots with the savory roasted and caramelized notes.


  • 1 Petite Pork Roast
  • ¼ cup chopped onion
  • 3 clove garlic, chopped
  • 1 Tbsp. fresh rosemary, chopped
  • 1 tsp. fresh thyme, chopped
  • 1 tsp. whole fennel seeds
  • 1 tsp. crushed red pepper (optional)
  • 1 tsp. freshly ground black pepper
  • 2 Tbsp. extra-virgin olive oil
  • 1 Tbsp. kosher Salt


  1. Pre heat oven to 400°. Toss carrots, garlic, oil, and herbs to coat. Season with salt and pepper.
  2. Lay carrots out on baking sheet being sure to spread out evenly.
  3. Roast carrots for 20 minutes and stir/flip carrots over. Roast an additional 20 minutes, or until tender.
  4. Remove from oven and serve.

Chef’s Notes

  • Experiment with different herbs, such as thyme, for a different flavor nuance
  • Add additional vegetables, such as leeks, and radish
  • Before cooking, drizzle carrots with maple syrup or honey for added complexity
  • Drizzle cooked carrots with a good balsamic vinegar or Extra Virgin Olive Oil
